The color of these yams with the specks of green are a delicious side dish. For 2 people.

Roasted Garnet Yams with Tarragon

2 large garnet yams, peeled
1 T fresh chopped tarragon
2 t extra virgin olive oil
1 garlic clove, minced
salt and pepper
1 t chili powder

Preheat the oven to 375.

Combine all of the ingredients other than the yams. Chop the yams into 1 inch chunks and combine with the sauce.

Roast the yams for 40-45 minutes, stirring often.
