Creamy Cauliflower Recipe

I have to give credit to my friend Maxine for this recipe, but it’s too good not to share. It’s an excellent substitute for mashed potatoes. Its creamy smooth texture is light and not at all starchy.
Creamy Cauliflower
1 head cauliflower
3-5 garlic cloves
sour cream
salt and pepper
basil pesto (optional)
Steam or boil the cauliflower and garlic till soft. Blend in food processor till pureed. Add sour cream to thicken. Use about 1/2 – 1 cup depending on your palate. Add S&P to taste. If you like, add about 1/2c basil pesto to liven it up.
This side dish goes really well with grilled or roasted meats.
